Cinnamon Rolls

A recipe for the anticipation of spring

Ireland does not quite get the usual early signs of spring the way other climates might. Instead of the gentle thaw of snow and tell-tale signs of buds, it’s been a season of endless rain. There is nothing that quells the dreariness than fresh classic cinnamon rolls.

Ingredients:

Dough:

  • 1 packet of active dry yeast
  • 580g (4 ⅔ cups) all-purpose flour 
  • 67g (⅓ cup) granulated sugar 
  • ½ tsp salt
  • 1 large egg
  • 85g (6 tbsp) unsalted butter (melted) 
  • 240ml whole milk (preferably warm)

Filling: 

  • 85g (4 tbsp) unsalted butter (room temperature) 
  • 100g (½ cup) brown sugar
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves

Icing: 

  • 57g (4 tbsp) unsalted butter (room temperature) 
  • 113g cream cheese (room temperature)
  • 90g (¾ cup) powdered sugar (icing sugar) 
  • 1 tsp vanilla extract 
  • 30ml (2 tbsp) milk

 

Instructions:

  1. Mix flour, sugar and salt in a medium bowl. Mix until combined.
  2. Add yeast, which is already active.*
  3. Gradually add the melted butter and mix until the dough comes together.
  4. Gradually add the egg and continue to mix.
  5. Knead the dough by hand for two or three minutes to ensure it is smooth and elastic. Place it in a greased bowl, cover with wet cloth, and let it rise in a warm place for about an hour or until it has doubled in size.
  6. Preheat your oven to 175°C (350°F).
  7. Prepare the filling by mixing the softened butter, brown sugar, cinnamon, nutmeg, and cloves in a bowl.
  8. Once the dough is ready, turn it out onto a lightly floured surface and roll into a large rectangle until the dough is stretched thin.
  9. Spread the cinnamon filling over the flat dough evenly.
  10. Carefully roll into a cylinder shape.
  11. Slice it vertically into 12 or so sections.*
  12. Arrange the cinnamon rolls in a greased baking pan close together.
  13. Pour the heavy cream over the rolls and brush each one lightly until coated.
  14. Bake for 25-30 minutes or until golden brown.
  15. Allow to cool, spread the icing generously and enjoy.

For the icing:

  1. In a small bowl, beat the softened butter and cream cheese together.
  2. Add the powdered sugar (icing sugar), vanilla extract and milk, then mix until combined and fluffy.

*If yeast is not already active, dissolve it in warm milk for five minutes until you add it to the mixture.
*You might find it easier to slice the sections and then roll.
